Ingredients
1 lb flank steak
Salty steak seasoning
1 shallot, finely minced
1 bunch parsley, chopped
1 bunch cilantro, chopped
½ cup roasted red peppers, sliced thin
1 can garbanzo beans, rinsed and drained
1 can white beans, rinsed and drained
1 container mini mozzarella balls
¼ cup red wine vinegar
½ cup olive oil
Pinch red pepper flakes
Big pinch sea salt
Juice of 1 lemon
Recipe
Season flank steak generously and let sit at least 10 minutes. Heat a grill to high. Cook steak 3–4 minutes per side for medium-rare. Rest while you prepare the salad.
Finely mince shallot. Chop parsley and cilantro. Slice roasted red peppers.
Add shallots, parsley, cilantro, and peppers to a large bowl. Add rinsed beans and drained mozzarella.
Cube the steak into small pieces and add to the bowl.
Add olive oil, red wine vinegar, red pepper flakes, sea salt, and lemon juice. Toss to combine.
